Chupaqueso
Jan. 17th, 2006 05:11 pmI just tried to make myself a chupaqueso; sort-of a taco with fried cheese replacing the shell. The recipe is dead simple, but the actual making of one requires practice and careful timing (the fried cheese is only at the right consistency for folding for a few seconds), which is why mine was less than spectacular. I was trying for a fried-cheese taco, and I got more like all-dressed fried-cheese nachos. It was still quite edible and low carb, just a lot messier than what I was aiming for. Oh well, I guess I just have to practice more, but first we'll need to buy more cheese. I've been burning through the stuff on this diet.

Date: 2006-01-18 06:39 am (UTC)It's called a "chupaqueso" either because you can suck (chupa) the cheese (queso) out of the middle as you crunch away, or because this cheese (queso) thing you made sucks (chupa).
