Okay, so it took 3 days rather than 3 hours, but I've gotten my system fully functional again. It appears that the only thing that was wrong with it before was the initrd couldn't handle the fact that an LVM volume was now on an IDE bus (and thus a hdxx) rather than on a SCSI (SATA) bus (and thus a sdxx).
So, one update-initramfs, and some jumping-around because I forgot to update my fstab, and all is working. I now even appear to have more HD space (despite having a smaller HD) so things are looking good!
I'm going to keep the old HD image around for a few days while I wait for any gotchas to show up, but I don't expect they will. I guess this means I won't be worrying about my system at home while I'm at Hurley's this evening.
