I'm currently working on backing up 200 GB of data from my old system drive to my new one. Once it completes, I'll take out my old drive, but in my new backup drive, and put a copy there.

THEN I will feel safe in moving stuff off of my old system (rather than copying).  I want to do a destructive move because I've discovered just how hard it is to make sure you've looked at everything. This way I know that anything that has been deleted from the old system has been looked at.

This is essential as I desperately want to rearrange how I've been organizing my files, and this seems like the best possible time to do it.
